Sugar Free Banana Cocoa Muffins

We eat a lot of fruit in our house but for some reason we always over buy bananas. Which I actually like because it gives me a reason to bake once they have browned. One of my favourite banana bread recipes is the “Sweet Home Alabanana Bread” from the Eat, Shrink and Be Merry cook book. I didn’t have a lot of necessary ingredients so I just made up some banana muffins as I went along with things I already had in the house. Whenever I make sugar free muffins I usually use applesauce for sweetness, which  I didn’t have so it ended up being a mash up of other ingredients and I think they’re really good!

What you’ll need

  • 4 very ripe mashed bananas
  • 2.5 cups quick cooking oats
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1.5 teaspoon baking powder
  • 2.5 tablespoons all natural honey
  • 1/4 cup whole wheat flour
  • 1 tablespoon cinnamon
  • 2.5 tablespoons cocoa (I used Fry’s)

First blend the eggs, oats, banana, baking powder and soda

Once those ingredients are well blended, add flour, cinnamon, cocoa, and honey. Preheat oven to 400.

This recipe made 12  smallish muffins, I always use cupcake liners, mostly because it makes for less clean up. These muffins don’t rise very high so you fill them 3/4 to almost the top of the liner.

Bake for 18 minutes, cool for 5-10 minutes. If you let cool closer to ten they won’t stick to the liner. These are so easy! If you have a sweet tooth that these don’t quite satisfy and you have applesauce on hand try adding a half cup and an additional 1/4 cup of flour. You could also try a few dark chocolate chips and crushed pecans, lots of room for experimentation with these. Enjoy!

PB&B Post Workout Cookies

I never know what to eat after a workout. I always have to eat before my workouts because I tend to get a migraine if I don’t, so I generally only want something light afterwards. I know I need a little protein, a little carb and a lot of tasty.  I kept seeing all these pins for energy bites and there are a lot of different varieties that people were trying. So I got into the kitchen and with a little trial and error, I ended up with these delicious post workout cookies. They don’t have to stay in post workout mode, they can also be eaten for a mid morning snack. These are clearly very biased to my tastes (give me peanut butter and dark chocolate and I’m in heaven) but there are easy ways to modify them, maybe with coconut flakes, almond butter instead of peanut, agave nectar or flaxseed. There are quite a few recipes out there for energy bites, a lot of them are no bake, but I put these guys in the oven for 20 minutes which made them a little firmer. Please let me know if you have your own version of these little protein delights.

Post Workout PB&B Cookies

1.75 cup crunchy peanut butter

.75 cup of quick oats

2 very ripe bananas

1 tblspn all natural honey

.5 cup of oat bran

.5 cup dark chocolate chips

pinch of cinnamon

Pre heat oven to 350. Mash your bananas, toss in pb, oats, bran and mix well. You don’t need to use a mixer, I did it easily with just a spoon. Drizzle in the honey and add the cinnamon and mix everything. Finally, fold in the chocolate chips.

They are quite wet at this point, having them in the oven solidifies them a bit but keeps them very soft. I did about a spoonful size for each cookie and baked for 20-25 minutes, any longer and the bottoms will start to burn.

Transfer to a plate and let cool. I just ate one and it was so good. Enjoy!

I’m spending the rest of the week getting mine and my husband’s Halloween costumes together and preparing for our Halloween Housewarming. We moved into a new house this week so that is a work in progress, but we thought a small Halloween party would be a fun way to show all our friends the new place. I know some of my friends are working on hilarious costumes and I can’t wait to see and take lots of pics to put up on this blog!
